packed tofu burgers

The journey that ended up with us making Tofu started with us going vegan one Lent and struggling to find good quality vegan produce made in rural Somerset.

The solution wasn't too far from home.  We embarked on a bit of googling and a bit of experimentation.  We soon realised that the key to making good Tofu is in the pressing and flavouring.  We converted our former apple press into a tofu press and set about creating the tasty, firm-pressed tofu which we had been craving.

After making fresh soya milk from organic soya beans, we add miso and arame seaweed before pressing, then marinade the tofu in tamari and cut them into burger sizes. The burgers are then smoked with apple wood, vacuum packed and pasteurized giving them a shelf-life of 2 months.  They are then ready to eat. .

Here are some of our favourite ways of preparing them……

Lightly fry and put in a sandwich with lettuce and tomato instead of bacon, for a vegan BLT

· Cut into cubes and add to stir-fries or Thai curries

· Deep fry them in a vegan batter to make ‘Tofish’ and chips

· Add cold to salads straight from the packet as an alternative to ham

· Slice thinly for the perfect sandwich filler in place of cheese
